Preheat the oven to 350F. In a mixing bowl whisk together the egg white and sugar until creamy. Beat in the almonds, lemon zest and juice and orange rind. Place the brioche slices on a baking sheet and spread them with the creamed mixture. Bake for 8-10 minutes. Serve hot.

Place the baking sheet on the middle rack of the oven and not higher. Lemon toasts make an excellent family-style dessert.
